    Chicken Consumers Beware--Part 2


    Dr. Michael Greger is a prolific researcher and blogger (to see his website go to http://NutritionFacts.org). He spoke at the International Conference on Nutrition and the Brain in Washington, D.C. on July 20th to an audience of over 600, most of them medical practitioners and researchers. His topics were many and varied and included a discussion on the adverse effects of a vitamin B-12 deficiency on the central nervous system. His lecture captivated the audience and he spoke in compelling terms about the dangers of chicken consumption and has posted about this on many occasions.     Chicken Consumers Beware: This is "Need to Know"
     
     
    Last month I attended the International Conference on Nutrition and the Brain in Washington, D.C., hosted by the Physician's Committee for Responsible Medicine (PCRM.org). The subject matter dealt with the effects of food and food borne toxins relative to neurological disorders including Alzheimer's Disease, MS and Parkinson's; my next few posts will focus on the conclusions of various presentations at the Conference.
     
    For many of us in the audience, the information on the dangers of chicken consumption was both surprising and distressing. Americans currently consume more than one million chickens per hour  and research links chicken consumption with increased risk of pathologies including cancer, bacterial contamination, urinary tract infections and neurological diseases. While some bacteria is destroyed in the cooking process (and cooking chicken is itself linked to formation of chemicals that are carcinogenic), just having raw chicken in the kitchen produces cross contamination that is nearly impossible to clean off.
     
    I strongly encourage readers to spend some time reviewing the data in these links and, if you find this information compelling, please pass it on to those you care about.
     
    The first link from PCRM is entitled "Fecal Soup in Chicken Products" and is based on information from a USDA training video obtained through the Freedom of Information Act: Poultry Slaughter Procedures. The video reveals that the chicken slaughtering process ends with carcasses soaking in cold water—“fecal soup”—for up to one hour before being packaged for consumers.     Eliminating Dairy from your Diet

    The debate continues on the health issues associated with consuming dairy...the evidence I am willing to stake my life on is weighted heavily on the side of eliminating dairy completely. And yet, when I teach the Food for Life classes or engage in this discussion at dinner parties, most people admit to wanting to quit dairy but really feel they "just can't live without it". Cheese is the food most commonly listed as their "addiction".

    Knowledge is power, so here is a great link from this month's PCRM (Physician's Committee for Responsible Medicine) Newsletter with a headline entitled Breaking the Cheese Addiction: Step 1--The Reality Check.

    Also, from the same website, the top 10 reasons to eliminate dairy (come to my classes and I will help you find dairy alternatives!):

     Dairy Top Ten List (as summarized from Cancer Project website and books)
    1) Fat : 1% Milk is actually 23% fat, 2% Milk is 37% fat
    2) Casein: fuels reproduction of cancerous cells (casein is the primary protein in dairy
    products – whey is the other)
    3) IGF-1: all dairy products (even organic) stimulate the production of IGF-1 in humans,
    which fuels reproduction of cancerous cells
    4) Hormones: all dairy products stimulate production of hormones in humans, which fuel
    reproduction of some types of cancerous cells
    5) Animal proteins (including dairy) create an acidic condition in the blood as the amino
    acids are broken down. The acidic blood draws calcium (an alkaline) from the bones to
    balance it. This calcium is flushed out to the bladder through the kidneys.
    a. Increase of dairy intake is directly linked to an increase in osteoporosis rates and
    hip fractures
    6) In young babies, the enzymes in milk can closely mimic enzymes in the pancreas. So,
    when the pancreas sees cow’s milk in the system, it may think it has “too much insulin”
    so it shuts off – leading to Type 1 Diabetes. For babies with a predisposition to Type 1
    Diabetes, there is a stronger correlation between cow’s milk consumption and Type 1
    Diabetes than there is between smoking and lung cancer.
    7) Dairy products are thought to stimulate the production of mucus, and exacerbate
    allergy symptoms and asthma. Many students have experienced relief from allergy
    symptoms after removing dairy from their diet for 30 days or so.
    8) There is suspected link between acne and dairy intake –  more detailed studies
    are being conducted currently.
    9) Dairy products’ sole purpose is to help a baby calf gain 1000 pounds in his first year of
    life – they are similarly linked to weight gain in humans. This accelerated weight gain
    and increase in hormone production leads to earlier puberty age in adolescents and
    earlier menarche age in young women.
    10) Dairy products interfere with the absorption of iron and vitamin D in the body (vit D3 is
    protective against many types of cancer).

    Probiotics: Take with a meal or on an empty stomach?

    This question comes up a lot as many supplemental probiotics offer conflicting directions on their labels...some suggest taking the supplement with a meal, some on an empty stomach and some don't specify. This new post from Dr. Greger showcases data developed in a Canadian study that actually replicated the digestive system to find optimal results for supplemental probiotics, concluding the supplements are best taken 30 minutes before or with a meal containing some fat content.

    Vitamin D Fends Off Disease

    A randomized trial on Vitamin D completed at Boston University School of Medicine came up with the following:

    “Our data suggest that any improvement in vitamin D status will significantly affect expression of genes that have a wide variety of biologic functions of more than 160 pathways linked to cancer, autoimmune disorders and cardiovascular disease which have been associated with vitamin D deficiency,” the study investigators submit that: “This study reveals for the first time molecular finger prints that help explain the nonskeletal health benefits of vitamin D.”
